Cranberry time! Yap. I am proud to report that the first fresh cranberries are available in the right now. Run, stock up on them – soon they will be gone – as suddenly as they appeared!
What’s wrong with her, you may wonder. Well – I live in Germany, and cranberries have just made their way here the latest years. And they don’t come in droves. So anytime I see one of these packages – I just need to buy it. When I managed to grab a package yesterday I immediately had to combine them with this delicious fudgy brownie recipe I had tried two weeks ago. And I was lucky. They turned out oh so sweet. I brought them to work (my co-workers are my secret testing animals – I analyze the time it takes until all crumbs are gone – no just kidding). Anyway, these were gone so quickly.
I wasn’t able to take decent photographs that quickly – I always have a hard time photographing brownies. Does anyone have tips and hints for me? The colour is hard to capture and I have simply no ideas on how to arrange them nicely. Well, anyway, here comes the recipe which is you will get done in no time.
Ingredients:
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ¼ tsp salt
- ⅓ cup butter
- 2 ounces semi-sweet chocolate, chopped
- 1 cup sugar
- ¼ cup skimmed milk
- 2 large egg yolks
- 1 large egg
- 1 cup fresh cranberries
- cooking spray
Directions:
Coat an 20cm / 8″ square metal baking pan with cooking spray.
Preheat oven to 175°C/ 350°F. Pour flour into a medium sized bowl and combine with cocoa, and salt, stir with a whisk until well combined.
Place butter and chocolate in double boiler and melt completely. Stir butter-chocolate mixture until smooth, and set aside. Let cool slightly and then add 1 cup sugar, milk (it is a good idea to add the milk before you add the egg yolks, to you don’t risk them to solify), egg yolks, and the egg. Stir with your handmixer until well combined. Add butter mixture to flour mixture, stirring just until combined. Then add the cranberries and whisk a bit more – just to get them distributed. Pour batter (it will be quite thick) into baking pan. Bake at 350° for 20 minutes or until a wooden pick inserted in center comes out almost clean. The almost clean is the most important part as this will guarantee your brownies to be moist and juicy – don’t overbake! Let cool before cutting into bite sized squares. Enjoy with a big glass of milk.
These are even better the second day. Place them into a airtight container and they will keep good for almost a week.

If you figure that all out about photographing brownies let me know! I struggle with them as well because I find there are 2 ways to set them up.. stacked on top of each other or just laying beside each other. They do look delicious though.. never would think to put cranberries in brownies!
I think your brownies look scrumptious in these photographs! I agree that they are hard to capture though being that they are dark in color, just like chocolate cake. Good lighting is important, as well as getting up close and personal with the baked goods and keeping them in focus. I think you did a great job though, and they look nice how they are arranged

I just bought my first bag of cranberries this year, too! I was so excited to see them in the store. This looks like the perfect recipe to start with. I think your photos look beautiful, brownies really are difficult to photograph!
I’ve never thought to put fresh cranberries in brownies either, but it sounds delicious! As for photographing them, I’m as stuck as you are! I try to stack them, but it’s hard to see their outline and always comes out looking like a giant brown blob. I guess the taste is what matters!
Well they look very delicious to me! I also struggle with brownie photos… even lighting really helps – but it really doesn’t look like you had any trouble with these. Some folks dust them with icing sugar, cocoa, or cinnamon (or a mix) to add a bit of contrast. Love the pops of red in there!
