This is a memory from the times I used to be in Sweden a lot. Kärleksmums means yummy (mums) love (kärlek), and these brownies are. Be aware that they are like this because they contain a lot of goodies: 5 eggs, 300g butter and not less than 400g of chocolate. Enjoy!
Ingredients:
for batter:
- 5 eggs
- 320 g sugar
- 270 g all purpose flour
- 3 tsp baking powder
- 1 pinch salt
- 5 tbsp cocoa, unsweetened
- 200 ml water
- 300 g butter
- 200 g semi-sweet chocolate (at least 70% cocoa), chopped
for the frosting:
- 200 ml heavy cream
- 2 tbsp strong espresso
- 200 g semi-sweet chocolate (at least 70% cocoa), roughly chopped
- 100 g coconut flakes
Directions:
Prepare a baking pan by lining it with parchment paper.
Preheat the oven to 200°C. Melt the butter and set aside. Finely chop the chocolate and set aside. Beat eggs with sugar until very fluffy (at least 4 minutes). The sugar-egg mix should have a pale colour, almost white. Mix flour, baking powder, salt and cocoa. Once they are homogeneously mixed, carefully beat them into the wet ingredients. Add water and butter carefully to the batter. The result will be relatively liquid – you will be able to pour it into the baking pan, which you do
. Now evenly spread the chopped chocolate on top of the batter. Bake on the middle rack for about 18-20 minutes, or until a wooden stick comes out clean. Let cool completely.
Heat the heavy cream until it comes to a boil. Remove from heat immediately and add the chopped chocolate. Whisk carefully until chocolate has melted completely. Cool the mixture a bit before frosting the cake with it. Let the frosting chill a bit (about 30 minutes), then sprinkle the cocoa flakes evenly across the cake. Let cool completely before cutting into squares (about 5x5cm).
